Banana Nut Muffins

Ingredients:
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 4 overripe bananas, mashed
- 1 cup brown sugar
- 3/4 cup (1 1/2 sticks) unsalted butter, melted and cooled
- 2 eggs
- 1 teaspoon pure vanilla extract
- 1/2 cup walnuts or pecans, chopped
Instructions:
- Preheat your oven to 350°F (175°C). Grease or line a muffin tin with paper liners and set aside.
- In a medium-sized mixing bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside.
- In a large mixing bowl, combine the mashed overripe bananas, brown sugar, melted and cooled butter, eggs, and vanilla extract. Mix until well combined.
- Gradually add the dry ingredients to the wet ingredients, stirring gently just until the flour mixture is fully incorporated into the banana mixture. Be careful not to overmix the batter; a few lumps are okay.
- Fold in the chopped walnuts or pecans into the batter.
- Using an ice cream scoop or a spoon, divide the batter evenly among the muffin cups, filling each about two-thirds full.
- Optional: You can sprinkle a few extra chopped nuts on top of each muffin for added texture and presentation.
- Bake the muffins in the preheated oven for about 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
- Once done, remove the muffins from the oven and allow them to cool in the muffin tin for 5 minutes. Then transfer them to a wire rack to cool completely.
