  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 4 overripe bananas, mashed
  • 1 cup brown sugar
  • 3/4 cup (1 1/2 sticks) unsalted butter, melted and cooled
  • 2 eggs
  • 1 teaspoon pure vanilla extract
  • 1/2 cup walnuts or pecans, chopped


  • Preheat your oven to 350°F (175°C). Grease or line a muffin tin with paper liners and set aside.
  • In a medium-sized mixing bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside.
  • In a large mixing bowl, combine the mashed overripe bananas, brown sugar, melted and cooled butter, eggs, and vanilla extract. Mix until well combined.
  • Gradually add the dry ingredients to the wet ingredients, stirring gently just until the flour mixture is fully incorporated into the banana mixture. Be careful not to overmix the batter; a few lumps are okay.
  • Fold in the chopped walnuts or pecans into the batter.
  • Using an ice cream scoop or a spoon, divide the batter evenly among the muffin cups, filling each about two-thirds full.
  • Optional: You can sprinkle a few extra chopped nuts on top of each muffin for added texture and presentation.
  • Bake the muffins in the preheated oven for about 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  • Once done, remove the muffins from the oven and allow them to cool in the muffin tin for 5 minutes. Then transfer them to a wire rack to cool completely.
